It's time for another recipe / idea for what to eat at dinner time. Today we're looking at the famous Philly cheese steak which usually comes in a sub or sandwich and converting it to a meal without the bread or grains. Another positive about this is that it's so easy to make. It really takes very little time, skill or cooking know how!
Ingredients (feeds 2-3)
500g steak (your choice of cut)
Handful of cup mushrooms
200g cheese, grated
Cut your steak into thin slices.
Chop up the onion into thin slices also.
With the pepper, slice that thinly too.
I like to cut the mushrooms up chunky to give a different texture.
Pop a teaspoon of coconut oil in a pan and bring to a high heat.
Add the pepper and onion and cook until they soften a little.
Add the mushrooms and continue to cook until onions are browning and mushrooms are softening.
Remove them and set them to one side - but don't let them get cold!
Next add your steak strips to the pan.
Cook these for a minute or two so they stay tender and have a little pink left.
Take a portion of the meat and pop it on a plate.
Add the onion, pepper and mushroom mix on top.
Now finish it off with a good portion of grated cheese.
You could always chuck it under the grill for a minute to really melt the cheese well, but that's up to you.
It really is one of the easiest meals to cook and is very good for you. Don't buy lean cuts of meat, have some fat on there to give more flavour and improve the balance of the meal. With the fat and protein from the cheese and meat alongside the carbs, vitamins and minerals from the veg you've got a lovely meal here.
