Time for another healthy meal idea today. It's not necessarily cooking in the same sense as my recent recipes but it's a good and healthy meal idea and is another one that's easy to do. Prep takes minutes, cooking takes about 20-25 minutes so within about half an hour of starting you've got yourself a lovely filling meal!
What is it? Gammon, egg and chips!
Ingredients (to feed 2)
Good quality gammon steak
Hand full of mushrooms
Cut your potatoes into slices to make your chips
Slice your mushrooms
Grate the cheese
Cut the gammon steak into portions
Pop your chips into a saucepan of boiling water and cook for ten minutes
After this remove them and add the boiled chip to an oven tray with coconut oil that's already hot (pop on the oven a few minutes beforehand)
Sprinkle with paprika and cayenne pepper to add some spice and flavour
Put the pan into the oven with the chips for about 10-15 minutes on a high heat to crisp them up
Now add your mushrooms to a frying pan of hot coconut oil and cook through
Place to one side (don't allow to cool down!)
Next it's time for the gammon
Pop the steak into the frying pan on a high heat and cook for a couple of minutes on each side until cooked through (could be longer depending on the size)
While it's cooking give the chips a bit of a shake to move them around the tray
Take the gammon and pop it to one side
Now pop your eggs in and fry them however you like them - runny yolk will retain the most nutritional value
Then plate it all up!
Pop the chips and gammon on the plate first. Then cover in the grated cheese and add the mushrooms. Finally pop the eggs on top.
There you have it, a nice and healthy meal that's also filling and easy to make. Sometimes the chips will take a little longer to cook, so judge when to start cooking the other bits by how long the chips are going to take. It might take a couple tries to get it spot on, but that's also part of the learning process!
